Pecan Tassies
From Cookery N’Orleans Style
1 Recipe for Cream Cheese Crust (see recipe for Maids of Honor Tartlets)
Prepare crust as directed and chill.
Filling:
1 ¾ cups packe4d light brown sugar
3 tablespoons butter
2 eggs, lightly beaten
1 teaspoon vanilla
Pinch salt
2 cups chopped pecans (or walnuts)
Combine filling ingredients in a medium saucepan. Cook over low heat stirring frequently until melted and well blended.
Shape dough into walnut sized balls. Pressed into greased miniature muffin tins. Fill ½ full with pecan mixture. Bake 350 degrees for 30-35 minutes.
Yield: 3-4 dozen.
