2/3 cup sugar
2 tablespoons cornstarch
1/3 cup apple cider vinegar
1/3 cup water
1/4 teaspoon salt
1/4 teaspoon black pepper
2 tablespoons butter
Mix everything in a saucepan over medium heat. Once it starts to thicken add the beets (4 cups, skins removed), lower the heat to low, cover, and cook for 15 minutes. Stir often or else the mixture will burn.
