16 oz canned whole corn drained ¼ cup butter 1 ½ cups onion chopped ½ cup chopped green pepper 1 clove garlic 10 oz rotel tomatoes chopped with liquid 1 tsp salt Melt butter in 3 qt microwave safe dish. Sauté onion, pepper and garlic until tender (about 3 minutes). Add corn, tomatoes and salt. Cover with wax paper and cook in the microwave on high for 20 minutes (or a little less). Stir once or twice while cooking. |
