3 large red peppers 1 lb sweet Italian sausage* 1 chopped onion 1 freshly chopped tomato 2 tbsp Worcestershire sauce 1/2 tsp oregano 1 ½ cup mozzarella Halve peppers lengthwise and remove stems and seeds. Cook for 3 minutes in boiling water. Remove from water and sprinkle insides with a little salt and drain upside-down. In large skillet brown sausage and onion. Add tomato, Worcestershire sauce, oregano, and ½ cup water. Bring to a boil and simmer covered for 15 minutes. Remove from heat and stir in ¾ cup mozzarella. Spoon mixture into peppers and sprinkle with remaining mozzarella. Bake at 375 for 15 minutes. *Ground beef could also be used. |
