Corn Bread Salad
by Deidra

1 box Jiffy Cornbread Mix
9-12 strips bacon - fried and crumbled
1/2 cup sweet salad pickle cubes
1 bell pepper, chopped
2 cups celery, chopped
1 medium onion, chopped
4 medium tomatoes, chopped
1 cup mayonnaise + 1/4 cup sweet pickle juice

Mix mayo and pickle juice together, set aside. Bake corn bread according to pkg. directions. Cool and crumble. Mix bacon, pickles, pepper, celery, onion and tomatoes together. Set aside. Layer bread and chopped vegetables. Store in refrigerator. Wait until ready to serve and then put mayonnaise mixture on top and toss.

This is a delicious. It has a sweet flavor. It works as a side dish really well or even alone. One taste and I was hooked.
