Oyster Dressing

Oyster Dressing
Adapted from Cookery N’Orleans Style
4 large onions, chopped
6 cloves garlic, minced
2 bunches green onions, chopped
1 bunch flat leaf parsley
1 cup strong olive oil
2 loaves stale po-boy French bread, cubed
1 quart large oysters and their liquid
1 teaspoon thyme
½ teaspoon salt
½ teaspoon black pepper
Kitchen Bouquet
Fill a large frying pan with olive oil about ¼-inch deep. Cook white onions until transparent. Add green onions and garlic about 5 minutes. Stir in parsley. Cook 2 minutes more. Cook oysters in their liquid until the edges curl. Remove and chop oysters. Soak bread cubes in the strained oyster liquid. Season with thyme, salt and black pepper. Mix together all ingredients and fry on high fire in a little more olive oil. Stir constantly over medium-high heat about 10 minutes. Add a few drops of Kitchen Bouquet. Spread dressing into a large roasting pan. Bake at 375 degrees for 30-40 minutes.
This freezes well. Wrap tightly in foil. Just before baking, drizzle with a little juice from the turkey!
Serves 12-15.
