Maids of Honor Tartlets
From Cookery N’Orleans Style
Cream Cheese Tart:
1 8-ounce Philadelphia cream cheese
1 1/3 sticks Parkay margarine
2 ½ cups all purpose flour
Combine all ingredients until well blended. Cover and chill 2 hours.
Almond Topping:
1 egg white
Dash salt
½ cup sifted powdered sugar
½ cup ground blanched almonds
¼ teaspoon almond extract
Sliced almonds (decoration)
Filling:
Raspberry or cherry jam
Press 1 tablespoon of pastry into each 2-inch fluted tart pan. Spoon 1 teaspoon jam into each and chill. Preheat oven to 375 degrees. In a small bowl, beat egg white and salt to soft peaks. Gradually beat in sugar, 2 tablespoons at a time. Continue beating until well blended and thick. Stir in ground almonds and extract. Spoon almond topping over filling in each tart shell. Decorate with a sliced almond. Bake 25-30 minutes until topping is puffy and golden. Carefully remove from pans and cool on wire racks. Cool completely.
Yield: 26 tarts
